Should WSS battalions be restricted to straight ahead only?

I would say it depends on your rules and if they make it clear that only one "unit" can engage another unit. i.e. 2 units in column cannot attack 1 in line. Depends on scale too. I play at brigade level. I think WSS is historically pretty constrained on what infantry units can do and how they can be controlled. Generally I would say that units do not need to be EXACTLY line up in front of each other, but that units can only engage one other unit. They must overlap frontages by more than 50% on the table.

Should they be restricted to shooting straight ahead? ie the target within flank lines
