If you look at the actual ship model, the gun turrets appear (to me anyway) to be on the top and bottom of the ship – like a WWII bomber.

But in the movie they sometimes look parallel to each other. Especially when Han and Luke talk to each other.
How does that work?

I think it is because they don't show either of them upside down; and since they're in space and the gravity is manufactured, I suspect neither truly was "upside down". Because the camera shows them both oriented the same way, they appear to be parallel. It probably would have looked odd if they had filmed one upside down anyway.

Artificial Gravity is polarized 90 degrees in the tunnel. When they climb up/down it switches and they climb into the seats so their backs are toward the inside of the ship. The guns have a 180 degree arc top and bottom with a 360 degree rotation.

Artificial gravity goes in different directions in the turrets.

The Corvette you see at the beginning of Star Wars was meant to be the Falcon, they then changed the design. That's why they had to invent all kinds of weird gravity tricks to explain everything. It also explains the "missing escape pods" which are clearly visible on the other ship, but completely lacking in the Falcon.
