I am starting to paint units for Quatre Bras re-fight now, am I right in assuming that Dutch/Belgian and Nassau infantry battalions had 6 companies like French infantry battalions?

According to the information on the Mont Saint Jean website, which is to my eye one of the best about the organizations and uniforms of the armies there:

1st Nassau Rgt -- three battalions, two line and one Landwehr; six companies for 1st & 2nd, four companies for 3rd.

2nd Nassau Rgt -- three battalions, each with six companies

Rgt Orange-Nassau -- two battalions, probably each with six companies (hard to tell from web site information

Dutch_Belgian line battalions seemed to have six companies
Dutch-Belgian light battalions seemed to have six companies
Dutch-Belgian militia battalions seemed to have six companies

From the web site, the battalions all had flanker companies except for the 1st Nassau Rgt's 3rd Battalion.

This should get you started on further research of your own.

so "yes" seems the short answer

The 1st Nassau Regimental history lists the Landwehr Bn. as having at least 5 companies including a Grenadier and Flanker Co. The text is a bit unclear as it seems to imply there were 6 cos. at one point in the text.
Uniform distinctions for these latter two are not known.

Thank you very much. We are planning a re-fight of Quatre Bras at 1/15 scale so the units will be 60 figures strong. I'm basically doing the whole of 2nd Brigade, 2nd Division apart from 1st Battalion, 2nd Nassau Regiment which is being painted by someone else!
