I know that in case of cavalry one man of every four remainded with horses while other three fought dismounted.
Do we know how mounted infantrymen (eg Wilder's brigade) did in such situations ?

Wilder's Brigade tended to tether the horses and leave them well behind the battlefield. This is directly mentioned in "This Terrible Sound" when some of the retreating Yankees happened upon the horse and liberated a few.

Forrest often had his horse-holders holding 5 or more horses, or sometimes had his men hitch the horses to trees and leave no horse holders.
