In your Undead armies, do you stick with the usual human skeletons, mummies, ghouls and zombies, or do you also use Dwarf Undead, Elf Undead, etc.?

I like using undead everything in an army if the world supports it. When GW released their DoG undead set I thought that was the bees knees. They had dwarfs and orcs and elves, oh my!

not many companies make undead non-humans. I've seen a skeletal minotaur, Cyclops, dwarf, and I think Grenadier did a set of undead orcs and goblins. Plus Otherworld has a set of demi-human zombies – but there really aren't too many out there

GW had a unit of non-humans only once, last decade sometime. Other than that, there is only their modern stuff, which looks silly and can be said to be non-human skeletons only because they're so anatomically inaccurate, and some offerings by the 15mm manufacturers who can't resist adding an undead giant or mammoth to a skeleton army.

Also I think Reaper still have an undead dragon. Maybe Scotiagrendel as well?

Not non-human humanoids (usually), but all kinds of other non-humans. Zombie dinos. Skeletal opossums and weasels, and so on. Ghoulfish. And a revenant cat, once.

Splintered Light has a good variety of non-human skeletons in 15mm.

The D&D pre-painted miniatures had some skeletal and Zombie dogs, which are nice.

The Zombies! game had a pack of 100 Zombie Dogs which glowed in the dark, until you paint them…

Mage Knight had numerous undead figures: Giant Skeletons; Human Skeletons and Zombies; Zombie Centaurs; Zombie, and Skeletal Lizard Men figures; there are others, but I don't have a full catalog of them.

In my D&D game world, nearly every race cremates their dead, to avoid having them come back later… It makes a Necromancer's life -- challenging. Nobody pays attention to dogs, however, so Zombie/Skeletal Dog armies are not unheard of. Those races which worship the Dead Gods (they died in two wars of the gods, but they came back as undead gods…), have no issue with animating former members of their respective cults -- they get to serve their god twice: once in life, and until destroyed, in the un-life.

I use any, and all, types of undead creatures I can get my hands on. I do not restrict animation of corpses, all types are free to be compelled for service after death. Cheers!

Elven undead would look little different from the human variety, in most fantasy worlds.

I seem to recall one of the old GW plastic boxed sets had a few animal skulls for making undead beastmen mixed in among the human skulls.

In addition, there are (for whatever reason) a lot of demi-human undead miniatures for fantasy football. The good thing is that a simple weapon swap can make these into very good looking undead demi-human warriors.
