Does anyone knows any good paintings or engravings of German cavalrymen from the 1550-1570 period, or any good pictures of German cavalrymen armor from that time?

Unfortunately Dürer died in 1528 so never provided us with any examples from the period in question.

The Landeszeughaus in Graz and the Hofjagd und Rustkammer in Wien have a large number of armours from that period. The best engravings are those by Jost Amman.

For the Landeszeughaus you would want to invest in this DVD provided you have a computer that is old(!) enough to run it

Unfortunately the Hofjagd- und Rüstkammer has not published similar books as their publications fokus on the spectacular armours and weaponry rather than that worn in combat. So there a visit is the best solution :)
