I saw this years ago in Edinburgh castle in the prisoners quarters, supposedly carved by an American POW during rev war though I'd heard it was actually War of 1812

No Continental army prisoners kept there, as I recall. Maybe a privateer or navy. SM, you have anything on this?

One of my chums was a tour guide in Edinburgh Castle.

I doubt a continental soldier would have gone to the trouble of depicting the flag flying from a ship's stern, so more likely a sailor. The way the gunports are carved, flush with the gunwales, suggests War of 1812.

Oh, we were just there last summer and toured those quarters but failed to notice the flag. It was a good castle to tour.

A few Americans (including the CO) were captured with the French force landed at Fishguard in 1797.

Fishguard is 400-500 miles away from Edinburgh.

Would it be likely to march prisoners that far in order to imprison them?
