I have an idea to use a German FOO in a obsolete 6 Rad 231 Armored Car.
The use is with my Kurmark. This was a Panzer Gren Divion called up as one of the 30 Januar Divisions. For out of a KG and GrossDeutschland remnants.
There was a aufklarungs unit of Heavies and so on.

Now for my 28mm Germans I am looking to load to my ranks an FOO. Being in PZR GREN div. being in something armored is not too far fetched. Now since this vehicle was relegated to training and what not by the middle of the war it would fit scenario that these types of equipment were pressed back into service. I have one with a bedframe antenna(the big antenna seen on armored cars). So in several ways it fits the role.

Hard evidence would be nice to have but if a few agree this could work then I am off to Warlord to score the FOO. That gives me 3 of the 4 man crew right there. Hard to think they could have been crossed trained to fire the 20MM. they could have it but give minuses if they use it.

The advantage of an FOO on foot is they get a good save & always count as Gone to Ground. I assume you're going to allow the 231 to be Gone to Ground all the time? I prefer my FOOs on cycles so they can get to where they need to go in a hurry & are hard to spot. I think a 231 would be a much easier target

The book answer for a PzGren Arty Regt would indeed be a light car/kubelwagen vehicle. Armd OP vehicles were restricted to the SP Arty Bns by the late war period. It's not impossible of course that someone may have 'liberated' something a bit more exotic, but the morelikely vehicle would be a Kubelwagen.

FOO's try very hard not to be seen for very obvious health considerations ;)

Tooling around in a bloody great armored car with a bed frame on top is just too much advertising (those things were withdrawn from recon units for a very good reason)

One other small technical issue with the 231 6-rad armored car (and why they were withdrawn after the French Campaign IIRC) was their poor cross country performance, as they were built on a commercial 4x6 truck chassis (ie., no all wheel drive capability).

Personally, I for one would go with some piece of foreign built all-terrain kit like a French Laffly S20TL or perhaps a Bren carrier "acquired" by the Heer and "under new management" complete with fetching three color camo specs…evil grin
