One of the cool esthetics of medieval period is all the banners flags, just how many can I put in a u it, and were should I put them

It looks a bit off if every stand has a big one; like the horse race in Sienna.
Otherwise every lord seem to have had one, possibly so lots are ok. for the combined foot (archers, CB etc. ) more difficult unless they are from a town militia or something like an organized company.

I was thinking one big flag per unit, and then 2 smaller ones, thats what it looks like on films, not sure what the smaller ones signify

The standard of a great lord would be big. A bannerette somewhat smaller. A knight smaller still. Pennons might be on every single lance in a unit of cavalry, especially Military Orders types. So in a "battle" of massed contingents you really could have a passel of flags, way too many for my patience. I'm afraid my units are rather unimpressive where flags, standards and banners go. Usually each "unit" has only a single banner….

It seems likely that for English and Scottish armies (and possibly for others) you want one 'king's banner' for each major unit plus at least the banner of the commander of the formation. There were stiff penalties for going ahead of the King's banner in order to keep the unit together.
Now, whether the king's banner would be a copy/version of the royal standard – three leopards or a single lion rampant or possibly a national flag; St George's or St. Andrews cross – is unknown as far as I'm aware, so you could use either or both.
The king himself would obviously have a whopping great version of one or more probably both in his immediate entourage so everyone would know where he was.
