I would say do the following

Interpose projects that can be done fairly fast, between long term projects. That ways the instant gratification of the first will help maintain interest in the second.

Your problem is very familiar to me. KTravlos is steering you right; we call that "smallest vertical slice" or "low-hanging fruit" in agile methodology. Pick something you *can* finish quickly and knock it out, then divide bigger projects into manageable chunks.

I particularly like that minotaur(?) with the pump shotgun in the first picture. Is that a GW figure?

Assuming you want to have all of these figures finished then take one group at random.

Be hardheaded and finish them as soon as possible. Ignore the rest.

Once they are done take another group at random, rinse and repeat.

Just get them done, don't muck about, get them done!

I share your pain. Too many projects at once. I did the low hanging fruit thing. Had a big bunch of Rep Romans among the zombies and Naps. Single colour tunics and armour, pretty simple to get through, got them out of the way. Felt much better having cleared a pile then the rest looks much easier (plus I had room to put my coffee mug down on the table). The Hussars are at the back of the queue!
