It seems that the Cordiale powers have a greater selection of earlier, more rubbish aircraft. Other than the E111 what would people say is the earliest / crapest German plan? The Halberstadt D.III or something else?

The Halberstadt D type is very much early war and equivalent to the DH2 – firmly in the single gun and limited performance bracket. (It was a decidedly minimal improvement on the Eindekker – certainly not remotely in the Albatros's class.)

For dogfighting? The Taube.
But not for recon in the very early days.

In order, from earliest to mid war, the Wings of War/Glory German single seat planes that Nexus made and Ares makes would be:

Fokker E.III
Halberstadt D.III
Albatros D.II
Albatros D.III

The DH.2 can go against the first three, the Morane Saulnier the first two.

And personally I would take the Halberstadt over the DH.2 more often than not. It does have a decent side slip maneuver.
