Playing w/ 1:200 scale aircraft would require a hex mat with 3" hexes.
On a 5x8 table that translates roughly into a play area of 20 hexes by 32 hexes. If using any of the pre-written scenarios from the book, each square would be roughly 10 hexes by 11 hexes.
Plenty of space to play W.W. II aircraft that the fastest planes have a top speed of 5 hexes per turn. Even the jets usually are only moving at 6 or 7 hexes per turn. It would be tighter, but very playable area even for jets.
For 1:200 aircraft there are many places to get them. One dealer who regularly attends Cold Wars and Historicon sells a wide variety and rare (for example Italian MC200 and MC202) aircraft. They also sell stands for those aircraft. They make a very good product, but I couldn't find them on the web and don't remember their name.

Hope this helps you get started. Check Your 6! is the best set of air combat rules out there in my view. A perfect combination of simple game play with enough historical fact.
I'm not a pilot, I just play one on the game table. Give me a set of rules that allow me to do that.
