"Australian troops served in the Middle East and Western Front during the Great War — a much, much, longer way from home than, say, Tipperary. The folks at home, however, wanted to develop something that would survive the journey to their boys at the front. Anzac Biscuits were created to fill this need. Drawing on Scottish oatmeal based delicacies, Anzac biscuit recipes omitted eggs because of the scarcity of eggs during the war (after most poultry farmers joining the war effort) and so that the biscuits would not spoil when shipped long distances. The product the women of Australia created turned out to be delicious although the biscuits — like the equally yummy Italian biscotti — are distinctly on the hard side. This, though, makes them absolutely perfect for dunking in coffee…"

There was an extensive post on 'Anzac' cake/cookies/biscuit on the Australian War Memorial blog several months ago. The contemporary recipies are quite different from what is now claimed to be the correct ingredients. |

Yes, its almost that time again, I'll have to get my ol recipe out, I serve ANZAC biccies to all and sundry at my home about this time of year as a remembrance and although not a ANZAC this helps us to remember. They shall not be forgotten. |

I know where there are a couple of still sealed tins of US biscuits from the Great War. The historian in whose keeping they are and I were tempted to open a tin and see if they were still good, but decided that would not be worth breaking the integrity of an historical artifact. I shall have a go at making ANZAC biscuits for my next Great War game. |
