Did the Normans carry shield devices or a coat of armours on their shields?

Devices. "Coats" of arms did not exist for another hundred-plus years. Devices became more "heraldic" looking, then sometime in the late 13th century they began to turn into family coats of arms, etc.

Those are fun paint schemes. I do a similar thing, using a dominant color for every unit of eight or more minis….

I got stuck finishing my 48 Norman spearmen when I ran out of LBMS shield transfers. I painted last batch in a Spanish Reconquista style so I can port them into a Spanish warband for Crescent & The Cross. Glad to be done and onto something new!
