Does anyone know of any good miniatures for Kung Fu inspired games like fist full of Kung Fu. I know northstar do a range but I was wondering if you know of any others. Particularly martial artists and dual wielding chow yun fat / max payne types.

Take a look at Pulp Figures range for Yangtze gangs. Really meant for the 1920s – 30s, but some useful thugs I think.

I did a matrix game – (some secret tech I am not going to reveal here)

I can say that some Copplestone figures, plus Street Violence figures were used!

I think Eureka has some Kung Fu types.

RAFM has a Jack Burton (a little better than the Northstar one IMO) and a Beatrix from Kill Bill, among other things.

Black Hat has the Dragon Kings line, meant to be for games set in more mythical times, but could fit into your project.

Also, for general people in street clothes with guns, the trusty old Wargames Factory Apocalypse Survivor plastic kits. The male one even has one of the bodies based on Jack Burton.
