  I can use to Irish and Scottish mercenaries to war of the roses.

Don't know about Irish – were any actually involved in any battle of the WOTR?

For Scotish and French mercenaries, I recommend the Perry plastic mercenaries:

To answer my own question, the only battle at which Irish mercenaries were deployed was Stoke Field, 1487. Some would argue that strictly speaking, Stoke Field is not even a battle of the WOTR, these wars having ended at Bosworth in 1485. Be that as it may, the Irish at Stoke Field are described as "beggarly, naked and almost unarmed" (Brooks, 2005)

For basic army lists, you can browse the WAB Supplement for medievals. Also, Ian Heath's Armies of the Middle Ages is still useful for a first overview. There are some more specialized publications from the Lance & Longbow Society:

If you want to go more in depth, have a look at the books by Anthony Goodman and John Gillingham (both titled The Wars of the Roses).

really I donīt know at all well how to make an army list for WOTR.

I usually reckon on 50% archers, 40% billmen and 10% MAA. Any mercenaries, if spearmen or pike would be included in the 40% billmen, handgunners in the 50% archers.

Bear in mind that this is only a rule of thumb – we really have no idea what the force composition was, but IMHO these proportions seem to work.

And I don't think we can completely rule out the idea that Ormond, who brought the Irish to Mortimer's Cross, might have had some Irish troops with him at Towton as well.

By my rather limited understanding, the Welsh in the late 15th century would have looked pretty much like their English counter-parts. Just paint them with appropriate livery coats and banners.

If I were to make some WotR Welsh, my choice would probably be to use the figures from the original Perry plastic WotR kit (armed with bows, bills and spears).

Then again, I haven't actually seen any drawings of the later 15th century Welsh soldiers.

The Scots were present in large numbers at Verneuil, Cravant and Bauge as well as many sieges.

to be honest they wouldn't have looked very different from the English and French. It's a myth that the Scots were not equipped as well as everyone else.

The important thing would be to get their captains coat of arms and the livery of said captain correct.
