I am going to have to watch the Indian Jones Temple of Doom again with this article in mind. I don't remember the human sacrifice scene nor that the movie particularly mature.

I remember the scenes. But it wasn't just Temple that brought the rating; in some ways, Raiders set it up. I recall concern over the "snake in the mummy's mouth" and the melting/exploding Nazis in that film. So in some ways it was the one-two punch of Raiders and Temple that did the trick.
