is it me, or is there getting getting to be more and more pieces in these S-Models kits?

It seems to be a trend with wheeled vehicles for some reason. Look at Zvezda 15mm vehicles. The tanks tend to be minimal parts while the wheeled vehicles much more complicated and many more parts.

I suppose the 'fast build' producers feel that with a soft skin you can just leave bits off.

That looks good.

TBH I've never classified S Model as a quick build kit . I would classify them as medium fast build possibly on similar lines as Pegasus.

Fast Build for me are Armourfast ,PSC and Italerie quickbuild .
