Rohan villages are portrayed in the LOTR movies. But what of Gondor's villages? Did everyone in Gondor live in cities? I do not recall any description of either a Gondor village or a Fiefdom village in the books, however I did read them over 40 years ago.
Any suggestion for building a simple Gondorian village?

Shed loads of Gondorian villages, but they are all west of Minus Tirith effectively. The Pelennor was covered in farms remember.

Most of Gondor is behind the City and with it as a bulwark against Mordor and down on the south coast.

The natural assumption would be that a Gondorian village would look similar to the buildings we see in Minas Tirith and Osgiliath. But that would be quite unlikely. Certainly they might be influenced by these places, but remember that the main cities of Gondor were designed by royal architects (or artists and mathematicians more likely).

It's more likely that the villages would use materials sourced locally, such as timber or stone or even mud bricks, and building design would follow function more than artistry.

The stone for the White City was quarried at the foot of Mt Mindolluin and so the stone for other regions would probably be different colours, just like in real life. Also, roofs would have been made from those materials that were close to hand, such as shingles, thatch, or perhaps slate.

However, villages along the banks of the Anduin might have quarried the ruins of Osgiliath for stone (not an uncommon practice in ancient times).

The bulk of the population of Gondor lived along the southern slopes of the White Mountains, where there was a second large city called Dol Amroth.

I imagine a lot of Gondor would be like some parts of the Mediterranean, smaller plain buildings nestled amongst the ruins of a glorius past.

From the movie, themes in architecture of Minas Tirith are verticality, tall arches and the white color.

I would try to keep some of these elements in village architecture for three reasons…
Thematic consistency
Contrast to the Germanic (wood and thatch) look of Rohan buildings
If you ever game a siege of Minas Tirith, the buildings can be used again.

I would consider the following as a template. Perhaps a blue tile roof rather than thatch, lift some of the arches from the movies and perhaps even a tower/spire for flair.
