It is a close tie between Swordfishtrombones, Bone Machine and Rain Dogs for me, but I'll go with Rain Dogs.

I prefer his earlier stuff (you know, back when he actually had something resembling a voice), so for me The Heart of Saturday Night is tops, followed closely by Small Change.
That said, there is a lot on Bone Machine that I like.

Bone Machine. First I ever heard, and entirely on accident (I was looking for a Buffalo Tom song, and picked up Mr. Waits by mistake. Best mistake ever.)

Bone Machine. Bought it for 'don't Want to Grow Up' after seeing the awesome video late one night.

I really love Bone Machine, especially for when the days start getting short in October, but overall, I think Rain Dogs is one of the best albums of all time.
