Where can I get 15mm figures for a Stag, a Bull and a Horse that I can use to guard the tent of Mithridates?

Irregular Miniatures has a good selection; you may need to add the rack to get your stag.
You could also look at MiniFigs UK via Caliver's website.

I didn't see a stag in Irregular's long list of critters. (They do have Highand Cows now though, ooooh).

For a Stag, your best bet may be an HO figure:

the essex sea peoples ox-cart comes with 4 excellent oxen that would make great bulls, and 2 is plenty for an ox cart, so you needn't feel guilty about using one.
