I know that in the 7YW, there were strict places these fellows were supposed to occupy. As I'd like my regiments to reflect reality in some way, I was wondering where these fellows were posted during the ECW.

I think someone said that the standards and musicians were in the center of the pike stand? would the front rank include an officer and nco? And would there be an nco in the back ranks / flanks for stragglers and such?

Standards & musicians were with the pike stand, presumably not in the front rank when it came to push of pike. Officers positions were somewhat variable but your suppositions are probably right.

If you can find
wagner's Weapons and Warfare 1618-1648 you find a wealth of detail within..
