I would love to see fantasy rules for this. Wasn't there supposed to be some sort of Fantasy Expansion for this?

I thought it would be cool to use Crusader Miniatures's orc pirates. You really wouldn't need special rules. You could just use these fantasy models in place of regular pirates.

I haven't picked one up yet, but isn't the system based off of GW's Lord of the Rings skirmish game?

If so, would there not be rules for undead in that? I realize that wouldn't give you lists… but it might give you a starting point to make your own…?

Have you looked at Flagship Games' Pirates! rules? It might be what you are looking for. The basic book includes the fantasy variant, covering magic, fantastic creatures and fantasy crews (including the infamous "skeleton crew").

Check out their webpage – the battle reports should give you a pretty good idea of how games play.
